Potato Salad

 

2 pounds small Yukon gold potatoes, peeled

3 large eggs, hard boiled

1/2 bunch sliced scallions, white and green parts

2 cups mayonnaise

1/4 cup Dijon mustard

1/4 cup dill pickle relish

2 tablespoons chopped fresh flat-leaf parsley

1/2 bunch dill, chopped

1/2 lemon, juiced

Freshly ground black pepper and salt

Put the potatoes big saucepan of cold salted water. Bring to a simmer. Cook about 15 minutes Drain the potatoes in a colander and let them cool.

 Meanwhile, stir together the mayonnaise, mustard, pickle relish, parsley, and lemon juice in a bowl large enough to hold the potatoes. Peel the cool eggs and grate them into the bowl. Stick a fork into the potatoes and lift them 1 at a time out of the colander. Break up the potatoes by hand into rough chunks, add them to the bowl and toss to coat with the dressing. Season, to taste, with salt and pepper.

We also got her a big coloring book thing.  I had to get stuff that she'd be able to take with us since we're moving not long after her birthday. 

I really wanted to get her a pillow & blanket set for traveling, they have a couple cute ones at toys r us.  I have them saved in her kaboodle list

She really wants a boy & girl barbie.  She's also into polly pocket, my little pony, hello kitty, dress up stuff.  They have a cute keyboard at Target that I think she'd love too, it might drive us crazy, but she loves music. 

Hello

I was on a posting streak there wasn't I.  Working days kind of gets in the way when I get home at 7pm and have to be back at work at 7am the last thing I want to do is blog. 

I'm sure you're wondering how the diet is going.  Pretty good, yesterday we cheated a bit, had Wendy's.  I had an awful migraine that kept me doing nothing pretty much all day.  I was either laying around or in the bath.  It finally went away around 6 yesterday and then I conviced Sean I needed ice cream.  So, yesterday wasn't the best diet day, but we were good Friday & Saturday. 

I'm trying to get stuff together for our yard sale we're going to have on Saturday, I'm not sure that we'll have a lot of stuff, but if not we're donating it all.  Nothing is coming back into the house. 

Sweet Shoppe FOBTY: Eco Friendly

Sweet Shoppe's Question, what do you do that is Eco Friendly?

There aren't a whole lot of things that I do in base housing that are that Eco Friendly, I'll admit it, but when I get my own house, I would like to make it as Eco Friendly as possible.  I'd say the one thing we do is recycle. 

How Much Weight

I'll post my food journal for today later tonight after dinner.

So, yesterday I told you'd post how much weight I'd lost after 7 days.  Well, 5.5 pounds.  I think that is pretty crazy!  I still need to lose about 2 more to be at my before Christmas weight.  LOL!  But, that puts me back at 28 pounds that I've lost since Cooper was born last year.  So far I'm doing good, no cheating.  And trust me, I really wanted a Cinnabon and Cherry Coke when I went grocery shopping today, but I had subway and a stupid water. 

Here's a picture I took of me today, I'm gonna try and keep up with it so I can see how much I'm losing in my face.

Concerts

I don't think I've posted about this yet, I'm not sure why I haven't. 

This summer Sean and I are going to a couple of awesome concerts. 

In July we're going to see Brad Paisley & Dierks Bentley.  We've seen Brad before and he's amazing!  And I've been wanting to see Dierks pretty much forever now, so that is my Mother's Day present.  I can't wait.

Day 6 and 7

I hope I remembered everything for day six, I left my little notebook at work that had everything written down in it.

Day Six

Breakfast

Oatmeal, w/ Banana, 1/2 tbsp walnuts

3 boiled egg whites

1/2 cup strawberries

8 oz fat free milk

Snack

Apple w/ 1 tbsp Peanut Butter

Lunch

2 cups Sausage & Lental Soup w/ salad

Snack

String Cheese & Orange (I think, can't remember)

Dinner

Chili

1/4 cup vanilla yogurt w/ 1 cup blackberries & 1 tbsp pecans

Workout

Ellptical & Swimming for 1:10

total calories burned 1100

Day Seven

Breakfast

Wheat English Muffin, 1 tbsp lite cream cheese

3 oz smoked salmon, 1/2 apple

Snack

Orange, 2 tbsp granola

Lunch

Turkey Wrap w/ Baked Sweet Potato

Snack

Banana Smoothie w/ yogurt & milk

Dinner

4 oz grilled salmon, 1/3 cup brown rice, asparagus

Workout

Ellptical & Swimming for 1:20

total calories burned 1400

Tomorrow I'll let you know how much I lost after the first 7 days.  So far I like the diet, some days are harder than others to stay on track, but I've done really good I think this past week and now that I'm able to workout again I think I'll start seeing more. 

Baked Beans

 

2 cloves garlic, chopped

2 (28-ounce) cans baked beans

1/2 cup brown sugar

1/4 cup molasses

1 cup BBQ Sauce, (I used Sweet Baby Ray's Vidalia Onion flavored) 

1 pound smoked sausage

Preheat oven to 275 degrees F.

In a large Dutch oven add the baked beans and remaining ingredients and bring to a low simmer. Cover the beans and place in the preheated oven. Bake for 45 minutes.
