BBQ Pork Sandwiches

 

BBQ Pulled Pork

2 pound lean pork loin
1/2 cup packed brown sugar
1/2 cup ketchup
1/3 cup apple cider vinegar
McCormick BBQ Pulled Pork Seasoning packet

Cut roast in big 2x3 in. pieces, mix last 4 ingredients together with a whisk and pour over pork in
a casserole dish. Cover and bake 1 1/2 hrs or until done in a 350 degree oven. Let cool some and shred.

McCormicks Seasoning Packet is actually made for Slow Cookers but, but it works fine in the oven or you can do it in the crockpot, I've done it both ways.

Serve on Hawaiian Sweet Rolls.

Quick post before bed

First thing you should know was it was -18 when I left the house this morning.  So, next time you complain about how freakin' cold it is where you are, unless its -18, then don't complain.  LOL!

My poor little Keira is sick, been running a fever since Saturday, nothing super high, but high enough I had to go pick her up from daycare this morning.  Poor little thing, its been so long since she ran a fever I didn't even have Children's Motrin in the house, all infant and I got to thinking about it, I don't think she's had a fever since May 2006.  She seemed to be feeling better at bed time. 

I can't remember exactly what my new years resolution was last year, it was either to scan all my wedding pictures or get them scrapped.  Well, they're all scanned and I've scrapped 67 pages worth, so maybe by Wednesday night I can finish the entire album.  Here are a couple of my favorites.

 

 

 

Not much today

Not a whole lot going on today, waiting for Sean to get out of the bed, we need to run to the store and pick up a few things like milk, etc.  Just sitting her listening to Sugarland.

I finished the Jon & Kate plus 8 book today.  It was pretty good, only really covered the pregnancy and the first year of their lives, but still a good read.  I enjoyed it.

Trying to scrap, but I always have a hard time getting started on the major events, not sure why, just too many pictures I guess.  I did a few pages though.

 

 

 

My gifts

I guess I could tell everyone what I got for Christmas.  And Maybe I'll round up what Sean got too.  LOL!  Pictures of everything I got except Travel Scattegories and a couple shirts from Old Navy, couldn't find a pictures of them.

Christmas Eve & Christmas Day Run Down

Christmas Eve Sean and I were both off, so I started the day with Sausage gravy & Biscuits for breakfast, then we started on housework.  Santa couldn't come to a messy house.  We didn't really have much to do, vaccuming, dusting, organzing toys. 

We had steak, fried shrimp & salad with rum cake for our Christmas dinner and it turned out when I had dinner all ready to go the kids were both asleep, so we sat down to a nice dinner without the kids.  Oh, it was so nice, you don't even know.

We took some pictures, then went for a drive to see Christmas lights, came back to the house and the kids opened their jammies and we got them each a gift from each other to open.  Keira got an Ariel doll with a horse from Cooper and Cooper got a fisher-price tool bag.  We always watch How the Grinch Stole Christmas (cartoon version), then Keira got her first note for Santa ready and the cookies and milk.  Cooper went to bed.  Sean always reads the night before Christmas and I read Frosty the Snowman and then it was lights out. 

Then Santa went to work.

Christmas morning first thing Keira did was check the cookies and I'll tell you she was a little upset that Santa didn't each all of the cookies.  He left just a little bite of one of the sugar cookies.  She was so excited.  We did their stockings first, my camera was acting up again, the lens didn't want to focus on anything, so I didn't get as many good pictures as I'd have like to while they were opening gifts.  Man, its hard when you have 2 little ones to watch and help open stuff.  We ended up putting Cooper in the wagon and strapping him down. 

After presents Sean watched a Christmas Story, because I hate it and that's the way we do it every year.  I cook breakfast, he opens packages and watches that movie.  We had our Gingerbread Waffles and sausage.  My waffle making was super fast this year with my new waffle iron that makes 4 at a time rather than one.  Oh it was awesome.  We enjoyed our breakfast and played some more.  Watched Elf, Cooper took a nap. 

Keira took a little nap, or played in her room, what ever you want to call it.  We always have a Christmas movie Marathon on Christmas day, so we watch The Santa Claus 2 & 3, Christmas Vacation, we didn't get a chance to watch Scrooged, so we're going to tonight after Sean gets home from work.  Also we watch a Charlie Brown Christmas, Keira's been watching all the other Christmas classics all month.

We played in the snow for a little while, it was way cold though and snowing pretty good.  Cooper sat in the wagon while we played.

And the best thing is this was our last Christmas in Alaska and away from family.  Its always fun on Christmas with us, but it also seems a little lonely.  I already excited for next year.

Merry Christmas

Just wanted to share a few pictures of our Christmas Eve with everyone.  Sean and I are getting ready to settle down and watch Burn After Reading and then head to bed. 

 

Best we could do with 2 crazy kids and a tripod, and yes, I have gained weight, not as much as it looks like though, 7 pounds.  I know, stupid holidays.
